About the Role
We are recruiting a Temp Sous Chef to join an independent cafe-restaurant in Ledbury on a temporary basis. This role offers a competitive hourly rate of £17.37 per hour (inclusive of holiday pay) and involves supporting the Head Chef and kitchen team across breakfast, brunch and lunch services. The successful candidate will be reliable, organised, and comfortable working in a busy, small-team environment using fresh seasonal ingredients.
What You’ll Be Doing
As Temp Sous Chef you will step in to maintain consistent service and food quality during cover periods. Typical duties include:
- Prepare, cook and plate dishes to menu specification across breakfast, brunch and lunch.
- Support the Head Chef in planning service, mise en place and daily prep.
- Supervise and support junior kitchen staff during shifts, ensuring smooth service flow.
- Maintain portion control, presentation standards and quality consistency.
- Receive and rotate deliveries, assist with basic stock control and minimise waste.
- Uphold food hygiene, allergen and health & safety procedures at all times.
- Keep the kitchen, equipment and storage areas clean, organised and compliant.
Key Responsibilities
- Lead the kitchen in the Head Chef’s absence and deputise effectively during service.
- Ensure timely preparation to meet service demands and maintain menu consistency.
- Coach and guide junior cooks, fostering a cooperative and professional team atmosphere.
- Support basic administrative tasks such as stock checks and recording deliveries.
Skills & Experience
- Previous experience as a Sous Chef, Demi Chef de Partie or experienced Chef de Partie in a cafe, bistro or similar daytime-focused environment.
- Strong practical cooking skills with experience of brunch/daytime menus and fresh seasonal ingredients.
- Good knowledge of food hygiene and safety (Level 2 Food Hygiene desirable).
- Ability to work under pressure, prioritise tasks and meet service times.
- Clear communicator, team-player with a positive and professional approach.
- Flexible, reliable and willing to cover intermittent dates as required.
